Ingredients

  • 1⅔ cups of warm water
  • tablespoons of Extra virgin olive oil
  • 2 teaspoons of Instant yeast
  • 1 tablespoon of salt
  • 2 tablespoons of granulated sugar
  • cups all-purpose flour

Equipment

  • Mixing bowl
  • Sturdy spoon or spatula
  • Cast iron pan or baking tray.
  • Plastic wrap or lid
  • Pizza stone or steel (optional)
  • Measuring cups and spoons

Method

  1. Mix the Dough: Combine warm water, olive oil, yeast, salt, and sugar in a bowl. Stir gently. Slowly add flour while mixing with a spoon until it forms a dough.
  2. Hand Mix and Ferment: Switch to using your wet hand. Squeeze and mix the dough until smooth. Cover and let it sit for 30 minutes.
  3. Fold and Shape: Wet your hand again. Stretch and fold the dough 4–5 times. Flip it seam-side down and shape it into a ball. Cover and rest for 60 minutes.
  4. Divide and Pre-Shape: Turn the dough onto a floured surface. Divide into 4 equal parts. Fold each piece and roll into a ball. Place it on an oiled tray and rest for 15 minutes.
  5. Press and Top: Press each dough ball into a pizza shape. Use a cast-iron pan or baking tray. Let it rest for 10 minutes, then press again. Add sauce and toppings.
  6. Bake: Bake at 550°F for 12 minutes in a pan or 10 minutes on a stone. The crust should be golden, and the cheese should be bubbly.

Notes

Use fresh yeast for best results. To activate the yeast, boil the water at 30°C.
