Prime Rib Side Dishes, Sorted by Oven Space and Timing

Sliced medium-rare prime rib with mashed potatoes, creamed spinach, salad, glazed carrots and Yorkshire puddings

The best prime rib side dishes are the ones that don’t need the oven while the roast is in it. Mashed potatoes, creamed spinach and a crisp salad cover the burner and make-ahead lanes, and one dish can ride along at the roast’s 325°F. Save the high-heat sides for after it comes out.

USDA’s roasting chart puts a bone-in rib roast at 325°F for 23 to 30 minutes per pound. A 6-pound roast holds your oven for 2 hours 18 minutes to 3 hours, and an 8-pounder for up to 4. Wondering what yours needs? Our prime rib cooking time calculator does the math for your weight and dinner time.

When I host, I plan the oven first and the menu second. That’s where holiday dinners go wrong!

Which prime rib side dishes fit around a 325°F roast?

Pick one side from each lane: burner, make-ahead and oven. USDA’s rib roast chart runs at 325°F, and the agency says not to roast meat below that, so anything you bake beside the beef has to tolerate that heat. Everything else you cook on a burner or pull from the fridge.

Prime rib side dishes timeline: make-aheads the day before, burner sides while the roast cooks at 325°F, hot-oven sides during the rest, then serve at 145°F
The table below sorts dishes by what you want. This timeline sorts the same dishes by the clock, from the day before to the first slice.

The trap? Choosing three sides that all want the oven at once. Three casseroles can’t share one rack, and three sautés need more burners than most kitchens have. Spread the load across lanes. The last hour gets calm.

A calm prime rib menu uses one burner side, one make-ahead side and one oven side instead of asking every dish to compete for the oven.

What can cook on the burner while the roast is in the oven?

Creamed spinach, mashed potatoes and asparagus all finish on a burner, so they never touch the oven. They’re the safest sides for a first prime rib dinner. You don’t have to watch the clock for any of them, because nothing depends on the roast’s timing.

For creamed spinach, our House of Prime Rib creamed spinach copycat is built for exactly this slot. Mashed potatoes hold well in a slow cooker on low if you have one, which frees the burner for the asparagus. A reply in an r/SFFood thread about House of Prime Rib’s menu gets the idea across.

“Get the mashed potatoes with the baked potato fixings. Thank me later”

That’s one poster’s tip, not a rule. Still, it hints at a good trick. Put the toppings in bowls and let your guests build their own.

What vegetables go with prime rib besides carrots and Brussels sprouts?

Asparagus with hollandaise is a popular answer in a r/Cooking thread from a cook who wanted something other than carrots or Brussels sprouts. It’s a burner dish, and the sauce is whisked right before serving, so it fits the last 15 minutes.

“Hi, does anyone have recommendations for vegetable sides to make with prime rib? I want to make some new sides this year that aren’t carrots or Brussel sprouts. Thanks in advance. edit: any ideas for corn or cauliflower?”

“Asparagus with hollandaise sauce”
– r/Cooking (106 upvotes)

It’s a short answer and a popular one. Hollandaise is rich, so keep the rest of your plate lighter. Want something that needs no heat at all? A salad with lemon does the job.

Which sides can share the oven with the roast?

Baked sides can share the oven only if they’re happy at the roast’s 325°F. Many casserole recipes are written for 350°F, a little hotter than the roast, so mac and cheese is better assembled ahead and baked once the beef is out. Don’t raise the oven while the roast is still in it.

Crunch is where the oven gets contested. One r/Cooking commenter, asked for crispy sides, had a simple fix for two classics at once.

“Instead of french fries, you could do crispy roasted potatoes. And/or add a crumb topping to the Mac and cheese!”
– r/Cooking (23 upvotes)

Both ideas want more heat than the roast gets. So they wait. They belong in the next lane, after the beef comes out.

When do the hot-oven sides go in?

The hot-oven sides go in while the roast rests under foil. USDA says to take beef roasts off the heat at 145°F, measured with a food thermometer, and let them rest at least 3 minutes before carving. Anything longer than that is your call, since USDA gives no figure for it.

That gap is useful. A rested roast is still hot, and the empty oven can finish Yorkshire pudding or crispy potatoes at high heat. Yorkshire pudding wants drippings and a very hot pan, so it only works once the roast is out and the fat is in hand. Tell your guests dinner starts a little after the roast leaves the oven. You’ll serve it all hot!

Work backward from your dinner time. If the roast needs 2 hours 18 minutes to 3 hours, the calculator gives you a start window for the oven, and the high-heat sides take the slot after it.

What sauces go with prime rib?

Horseradish cream and au jus are the usual pair. Stir the horseradish ahead, since it needs no heat, and make the au jus from the roast’s drippings once the beef comes out. Neither one competes for the oven or the burners for long.

Prime rib side dishes: quick answers

What are some good appetizers for a prime rib dinner?

Keep them light and cold, because the beef is rich and the oven is busy. Shrimp cocktail, a cheese board and deviled eggs all come out of the fridge and need no oven time.

What temperature should prime rib reach?

USDA’s minimum for beef roasts is 145°F on a food thermometer, followed by a rest of at least 3 minutes. Some cooks choose a higher temperature for taste, and USDA says that’s a personal preference.

How long does a prime rib take in the oven?

USDA lists 23 to 30 minutes per pound for a bone-in rib roast of 4 to 8 pounds at 325°F, and 39 to 43 minutes per pound for a 4-pound boneless roast. Those times are approximate, so use a thermometer, not the clock. The chart is on the USDA FSIS holiday meat roasting page, last updated December 2024.
